Gluten Free Pancake Recipe

These simple gluten free pancakes are made with oat flour and are delicious!

Ingredients

  • 1 1/2 cups rolled oats (ground into fine powder in a coffee grinder)
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/8 tsp. cinnamon
  • 1 1/4 cup almond or rice milk
  • 1 egg
  • 2 tbsp. coconut oil

Directions:

  • Grind oats to a fine powder in a grinder or food processor.
  • Place ground oats, baking powder, and baking soda in a mixing bowl and stir.
  • Mix in wet ingredients. Add more milk if the batter seems too thick.
  • Heat a pan and add a little coconut oil
  • Pour 1/2 cup batter into the pan. Flip and cook each side.
  • Add more coconut oil before cooking the next pancake.
