One of the easiest meals to make in the fall and winter is soup! This time of year it’s natural to crave more warming foods. Soups are a great way to eat more cooked food in the colder months, but still get lots of vegetables.

Make things up as you go. Add whatever veggies you find in the fridge and experiment with adding herbs and spices depending on your preferences. See what happens! Below you’ll find a few healthy and easy soup recipes to get you started:

Lentil Soup Recipe:

Ingredients:

  • 1/2 onion
  • 4 cloves garlic
  • 4 carrots
  • 1 green peppers
  • 1 zucchini
  • 2 cup lentils (soaked)
  • 4 cups veg soup base
  • 2 cups water
  • 2 tsp dried basil, rosemary and crushed bay leaves

Directions:

  • Brown garlic and onion in pan with oil
  • Add all other ingredients
  • Simmer 1 hour on low
  • Serve with crumbled feta and crusty bread

Fall Soup Recipe:

Ingredients:

  • 5 medium carrots
  • 1 fennel bulb with stalk and leaves chopped
  • 3 red potatoes
  • 3 Broccoli stems chopped
  • 2 tbsp. olive oil
  • 3 cloves garlic
  • 1 tbs. ginger powder
  • 2 tsp. curry powder sea salt and pepper to taste

Directions:

  • Saute onions in oil
  • Add other chopped vegetables and enough water to cover them
  • Cook until tender
  • Blend and return to stockpot
  • Add more water and adjust salt and pepper
  • Simmer 10 more min. and serve

Potato and Leek Soup Recipe:

Ingredients:

  • 1 Large leek
  • 5 small red potatoes
  • 3 cups vegetable soup stock
  • 2 cloves garlic
  • thyme, basil, salt and pepper to taste
  • olive oil

Instructions:

  • Chop leeks and garlic and saute until tender and translucent
  • Add soup stock and herbs to taste
  • Blend until creamy
  • Add water for desired consistency

Healthy Vegetable Soup Recipe:

Ingredients:

  • 1 onion chopped
  • 3 large carrots chopped
  • 3 Broccoli stems
  • 2 bunches of green beans cut into 1 inch pieces
  • 2 tomatoes chopped
  • 2 zucchini chopped
  • 2 cups chopped kale
  • 2 cups chopped chard
  • 8 cups vegetable stock
  • 1 tbs olive oil
  • 3 cloves garlic
  • Fresh herbs (parsley, basil, oregano) sea salt and pepper to taste

Directions

  • Heat oil in large pot. Saute onions until soft.
  • Add garlic, carrots and broccoli stems.
  • Then add green beans, tomatoes and soup stock.
  • Simmer about 10 min.
  • Add zucchini, chopped greens and herbs.
  • Season with salt and pepper.
