Fall Soup

This time of year it is natural to crave more warming foods. Soups are a great way to eat lots of vegetables and yet keep food cooked as we move into the colder months. I'm all about making things up as you go. Add whatever veggies you find in the fridge and see what happens making this fall soup!

Fall Soup Recipe:


  • 5 medium carrots

  • 1 fennel bulb with stalk and leaves chopped

  • 3 red potatoes

  • 3 Broccoli stems chopped

  • 2 tbsp. olive oil

  • 3 cloves garlic

  • 1 tbs. ginger powder

  • 2 tsp. curry powder sea salt and pepper to taste


1) Saute onions in oil

2) Add other chopped vegetables and enough water to cover them

3) Cook until tender

4) Blend and return to stockpot

5) Add more water and adjust salt and pepper

6) Simmer 10 more min. and serve
